You need to go into system storage, games, sort by name (so you see both side by side) and delete the PS4 version. Otherwise it will continue to download it because you haven't deleted it. I stopped the download, deleted the files, and then set the version to PS5 to re-download. This worked, but the game icon sitting in my Home Screen. Find the one that says “Downloads” and hit X again. Find the download or downloads you want to pause and hit X, then select pause and hit X again. The download is now paused.
